Join us for the first time ever release of SHIN HOLLOW, especially here at the Cider House.
This limited release cider was bottle conditioned at Black Diamond Farm from our blend of homegrown apples including Porter’s Perfection, Albemarle Pippin, Ashmead’s Kernal, Golden Russet, and GoldRush (in descending portions). The tannins are velvety and lingering—dominated by Porter’s Perfection. It was fermented during the depths of last winter, with a cold adapted yeast that ferments cleanly and very slowly, to help conserve its latent cider aromatics. Tasters have noted vanilla, ginger, papaya, and green apples as aromas in this cider, with a complex texture and bracing acidity. As typical for bottle conditioned ciders or champagnes, ShinHollow has sustained effervescence that releases a yeasty aroma of fresh baked muffins, and some lees in the last pour. We will serve it in deep flutes, to let those bubbles bring it on for you!
