What, why?
When we apply the concept of terroir to cider, we think of how climate and soils contribute to the "sense of place" expressed in the cider. But how do human elements influence terroir?
The Finger Lakes is a beautiful region in New York State, known for its glacial carved landscapes, mineral soils and diverse micro-climates. It is some of the best fruit growing ground in the country. But did you also know that the Finger Lakes is home to some of this beverage's great champions of terroir?
Ezra Sherman of Eve's Cidery has been a pioneer of quality and craftsmanship in orchard based cider; growing cider apples and making Traditional Method cider in the Finger Lakes for 13 years.
Garrett Miller of Finger Lakes Cider House and Good Life Farm has been on the forefront of bringing about a holistic orcharding revival with his diverse, certified organic orchard and farm.
