Meet (some of the) newest members of the Redbyrd Orchard family:

Still Barrel

Still Barrel is a barrel fermented and barrel aged cider. Aged on primary fermentation
lees for seven months with frequent battonage to bring weight and roundness to
this cider.

A blend of Cox Orange Pippin, Margil, and Northern Spy for aroma and
balance. Manchurian Crab, Wickson Crab, Brown Snout and Major for tannins and
acidity.

An engaging nose of wood smoke, toasted coconut, vanilla, honey, and hints of a
late summer herb garden. Soft and round up front, finishing with strong tannins and
bright acidity. Finished still and unfiltered because we want you to enjoy it as we have,
straight out of the barrel. Lovely served with chevre and fresh baguette dipped in olive oil.


Harvest

For the celebration of the harvest, we bottled this early release cider from our first pressings of the 2015 crop. It is a blend of early season apples which lend their brightness and charm.  Harvest Cider is fresh and lively with taught tannins and racy acidity. Perfectly pairing with your hearty meals. Celebrate the season with us, enjoy!
 

Apples: 30% Sharps - Dolgo Crab, Browns Apple, 25% Wild Seedling apples, 25% Bittersweets- Major, Domaines, Tom Putt, Harry Masters Jersey, and Sweet Coppin, 20%
mixed Heirlooms.

In Your Glass: A spicy nose of rose hips,hibiscus, orange zest, cinnamon, and clove.
Full and round in the mid-palate. Finishingwith mouthwatering tannins and fresh acidity
